Hey Steemians! Today is the last day of a 4 day weekend for a lot of you, for the rest of us, the last day of only 2. Don't you think we need some soft doughy bread before we start the new week?

Ok, in most of my posts over the past week, my focus has been on dishes you can make for parties and get togethers with friends and families. Today is no different, this is a great idea for a little spin on your everyday roll. For those of you who want to 'spice' up your dinner rolls, this is for you.

Countdown to Christmas, 28 Days. (For most of us. I may include the dates of Christmas celebrated around the world in a later post. Good idea?)

For those of you who do not know it, sourdough is not a world wide known commodity. Sadly, it is not available here in Chile. I have to make my own. Once you've tasted good sourdough, there's no going back.

In order to do sourdough, you need a 'starter.' My starter recently had it's 2nd birthday. I'll reference how to start a 'starter' later.

RECIPE</h1

Ingredients

Dough:
1 tablespoon active dry yeast
1/2 cup lukewarm water
3 tablespoons sugar
1 1/2 teaspoons salt
1 cup sourdough starter
1 cup pumpkin puree
1/4 cup butter, melted
3 1/2 - 4 1/2 cups all purpose flour

Pretzel Wash:
1/2 cup boiling water
2 teaspoons baking soda

Egg Wash:
1 egg
1 tablespoon water

Instructions

A. Combine water, yeast, and sugar in a large mixing bowl and stir until yeast is dissolved. Let sit for about 5 minutes until bubbly. Stir in salt, sourdough starter, and pumpkin puree until smooth, then mix in butter. Add 3 1/2 cups of flour and mix into dough then turn out onto a lightly floured surface and knead for about 5 minutes, adding a bit more flour as needed until the dough is no longer sticky. Grease a bowl and place dough in it. Cover with plastic and place in a warm place to rise for about 1 hour or until doubled in size.
B. After it's doubled, turn it out onto floured surface again and divide it into 16 pieces and roll into balls. Grease an 8x8 inch pan with oil and place balls 4 by 4 inside. Cove with plastic and place in warm place to rise for 1 hour.
C. After 45 minutes, preheat oven to 375 degrees F (190 C). Mix boiling water and soda in a small bowl and set aside. Mix egg with one tablespoon of water in another small bowl.
D. When oven is hot, brush rolls first with pretzel wash, then with egg wash and sprinkle with salt. Bake for 25 - 35 minutes until golden pretzel brown on top.

They look very yummy, and I can imagine that adding pumpkin puree makes them moist and delicious!

Sourdough is the best! Like you say, there's no going back. Happy birthday to yours, lol. I bet those rolls are really good with that touch of salt on the top, too. You are good at those extra little touches that add to food!
