Hungarian Goulash:

One of my favorite beef dishes is the Hungarian Goulash, which I think is best prepared the day before it is consumed. This enhances the aromas and unites them, but of course you can eat it on the day you do it. It is a dense and rich dish filled with small pieces of veal, onion, garlic, carrots and potatoes that act as thickeners and seasoned with bay leaves, red pepper and pepper. Nothing special, but slowly cooking meat and vegetables make the dish incredibly dense and very delicious.

Necessary products:

1200 grams of beef veal cut into pieces by 2-4 centimeters
4 medium red onion heads cut into cubes
3 cloves of garlic, finely chopped or pressed
1 stalk of celery cut into retail
4 medium potatoes, peeled and cubed 2 centimeters
4 medium carrots cut into cubes
1 large red pepper, chopped at retail
2 tablespoons of butter
3 tablespoons of olive oil, suitable for cooking
1 cup of dry red wine
2 cups of peeled, sliced tomatoes from a can
1 tablespoon of white sugar
3-4 bay leaves
6 cups of beef broth
1 tablespoon of red pepper
sea salt and pepper to taste

Method of preparation:

Heat a large tablespoon of butter and all of the oil in a large, thick-bottomed saucepan. Once the butter melts, add the onions, garlic, celery and carrots and steam gently by adding two tablespoons of broth until the vegetables soften.

Remove the onion and put the meat in the same saucepan with a spoonful of butter. Fry it while lightly browning. Add the wine and one cup of the broth, and cover it for 30 minutes for medium heat.
Add the stewed vegetables, potatoes, pepper and another cup of broth, let everything boil on medium heat for another 20-30 minutes.

Finally add the chopped tomatoes, sugar, bay leaves and the remaining broth (the liquid should cover the meat and vegetables) and sprinkle with red pepper, pepper and salt if necessary, stir.

Reduce the fire, place the lid and cook for 1.5 - 2 hours until the meat dries well and the sauce is reduced. Add some more water to the end if you think it is too thick.
