CHICKPEA AND VEGETABLES
Calling all steemians to join me in enjoying this easy-to-prepare, yet delectable and nutritious chickpea and vegetables meal!!!
Yes, I am happy to share this delicious dish with you. This meal is also suitable for both our vegan/vegetarian friends.
One thing I love about this meal is that it paired most of my favourite ingredients namely; chickpeas (garbanzo beans), aubergine, hot pepper, tomatoes, spring onions, sweet yellow pepper, olive oil, onions, paprika, knorr cube, and salt. Interestingly, these ingredients paired so well to yield a yummy, drooling and nutritious meal, which I suppose no one will reject.
This Moroccan chickpea and vegetables dish is an ideal meal to prepare for both your family and friends. It can be served as a main meal or served as a side dish.
This dish is pretty easy to prepare, however, the only part that takes a little bit of time is getting the chickpeas ready. As a result, I usually soak the chickpeas overnight before cooking for easy tenderization.
Just a few steps for Preparing this dish;
(a) Soak the chickpeas overnight in clean water.
(b) Wash the chickpeas and cook until tender.
(c) Bring down the cooked chickpeas from heat, drain water and set aside.
(d) Blend the pepper and slice the onions.
(e) Saute the onions and blended pepper.
(f) Add the sliced vegetables then fry together until done.
(g) Combine the sauce and the cooked chickpeas.
(h) Bring down from heat and Enjoy!!!

My girlfriend is actually in Morocco on holiday this week (yes I'm aware how unlikely that sounds but it really is true).
This would be a great surprise dish to cook up when she gets back on Tuesday and the ingredients are all easy to source / sauce.

YESSSSS Pleaseeeeee, One of my favorite ingredients ever, and I love the flavor combination that you used for spices. I love this kind of food. I am surprised you did not throw a dash of cumin in. I also love that spice with Chickpeas. Yummmmm
