Chicken Biriyani
Biriyani can be made using Chicken, Mutton and vegetables as the main ingredients. Here I am illustrating the method of making chicken biriyani, which I found very tasty and delicious.
Ingredients:
Chicken pieces -1 kg
Biriyani rice - 500gms
onions - 2
green chillies - 1-2
shallots -10-15
Ginger - 3 inch piece
garlic - 12-15 cloves
coriander leaves(chopped) -1c
Mint leaves(chopped) 1 c
grated coconut - 1/2c
lemon juice - 1tsp
curd -1/2c
Butter/ ghee -1/4 c
cooking oil --- 1c for deep frying
chilly powder - 1tsp
coriander powder-2-3 tsp
turmeric powder- 1/4 tsp
cinnamon -1inch long piece 2,
cloves -4,
Aniseed- 1tsp,
cardamom -6 pieces
salt to taste.
Method:
- Grind ginger,garlic, green chillies and shallots together.
- Slice the onions thinly and deep fry it until golden brown.
3.Grind coconut and green leaves together and add lemon juice into it.
4.Powder one piece of cinnamon,aniseeds and 3 pieces of cardamom together.
5.Grind chilly powder,coriander powder and turmeric powder together
.
Heat half of ghee/butter in a pan and saute the ginger garlic mixture well, then add ground chilly powder paste and powdered masala into it and stir for some more time. Add chicken pieces into this ,add enough salt and stir well. Keep the chicken covered and cook until soft. Then add ground coconut and green leaves paste and curd into it and mix well and keep it covered for another 5 mins.Crush half of the fried onion and add that also into the chicken mixture and keep aside.This mixture should have a thick consistency.
In another pan, heat the remaining ghee/butter and add the rice and stir well. Then add 4-5 cups of water , remaining cinnamon,cloves,cardamom,and enough salt into the rice and cook until rice is soft.
Take a shallow dish and put half of the rice in to it, then spread chicken pieces together with its gravy , evenly onto it. Then spread the remaining rice on top of this.
keep the dish covered and leave it in hot oven for 5-7 minutes. Before serving, the remaining fried onions can be sprinkled on top of this. Garnish this with mint and coriander leaves.
Chicken biriyani can be served as a main meal ,together with tomato and onion salad, lemon pickle,and papads.
