Today's Sustainable Soup, Salad, and Sweet Potato Feast in the Garden of Eden

It is another amazing day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, cooking over fire on our indoor wood burning stove! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

Today we made a wonderful soup, salad, and sweet potato feast!



This was a colorful, wholesome, nutritious, sustainable, free feast for one and all!

We started with a lovely salad full of cauliflower, tomatoes, mushrooms, cucumber, shredded carrots, purple cabbage, and yummy garden greens.



Check out all those brightly colored layers! You can see that this salad is bursting with phytonutrients, vitamins, and minerals. 



We paired the salad with steamed orange and white sweet potatoes! We have a variety of toppings for salads and potatoes so everyone can customize their dishes to their tastes. For salad, we often dress them with one of our homemade vinegars (we have a mild white grape with rosemary in rotation right now), olive oil, liquid aminos, and nuts, seeds, and/or dried fruits.

For today's sweet potatoes, we used a dollop of citrus cranberry sauce with cream cheese and fresh green onions from the garden.



To make the soup, we started by chopping a basket of purple and red new potatoes. 



We added some white, yellow, and green onions along with garlic chives.



We also picked a handful of powerful herbs from the herb garden to add fresh flavor and lots of nutrients! This is rosemary, thyme, and oregano. 



We added turkey left over from yesterday's feast, bones and all. Bone broth is highly nutritious, and the meat more or less falls right off as it simmers in the broth. We stirred in the herbs at the end of cooking.



The soup turned out lovely and satisfying!



Everyone thoroughly enjoyed today's epic and beautiful feast!

Good question, @snowflake! Sweet potatoes, greens, carrots, garlic, onions, and herbs are just a few of our staples this time of year. Almost anything can grow in a greenhouse year round, and we take care to cover and protect our raised beds when there are freezes in the forecast. Some crops, like certain greens, actually get a little sweeter and crisper when the temperature drops, although they too must be covered or moved indoors when it gets especially cold.
