Easy Recipe; Delicious Fish in Coconut Sauce served with Rice and Steamed spinach

Yesterday was a holiday. We celebrated Eid-Ul-Fitr with our Muslim brothers and sisters.
For this occasion, I decided to make Fish in coconut sauce served with rice and spinach for the family, its delicious and simple.
Here is an easy to follow recipe:
Ingredients
1 medium sized onion diced
3 medium sized red tomatoes
5-6 cloves of garlic crushed
Half diced green capsicum (You can use any color)
1 bunch of coriander
0.5 Kg Fish fillet cut into cubes
1 small can tomato paste
1 small can coconut milk/cream
2 table spoons vegetable cooking oil
2 cups boiled water
Salt to taste




Spices
Tumeric
Dhana jeera
Black pepper
Cayenne Pepper
Dry bay leaves
Corriander powder
Paprika

For the rice
1 cup of clean rice
2 cups of hot water
1 table spoon of margarine
Pinch of salt to taste

Spinach
5 bunches of spinach
vegetable cooking oil
Pinch of salt to taste

Method
In a large cooking pot, heat the oil on medium heat and add the onions. Stir for 3/4 minutes until golden brown and add the crushed garlic. Cook the garlic for about 1 minute. To this, add the diced onions and reduce the heat to low. Allow the tomatoes to cook completely to form a paste and then add the capsicum.


Add the tomato paste and coconut milk/cream. Stir until completely mixed with the tomatoes. At this point, add all the spices one by one. You can add spices to your taste. Mix well and cook for about 3-4 minutes. Add the boiled water to this mixture and let it simmer and come to a boil.

When the sauce bubbling add your diced fish and stir. The fish cooks very fast so shouldn't cook for more than 5 minute otherwise it will start to crumble and dissolve into the sauce. When you are about to remove from the heat, add the Fresh coriander and mix it in


Remove from heat and don't forget to remove the dry bay leaves from the sauce.

In a separate cooking pot, add the boiled water and rice, cover and cook on low heat until the water is about all evaporated. remove from heat and pour it in a baking try with the little water.
Heat the oven at 150 degrees. To give the rice the yellow/golden colour, I mixed a teaspoon of egg yellow food colour and about a quarter cup of milk. I then poured this mixture on to the rice and spread with a fork. Cover the rice with foil.
Bake the rice for about 10 minutes until fluffy and soft.



Cut the spinach into shreds and cook with a little oil for 5 minutes, add salt to taste.

Simple, healthy and delicious:-)
