Christmas the Kenyan way
Its been a while since I posted here.
Am sure we all had a Merry Christmas with our family and friends. I was also blessed to share it with my family. We all made merry together with lots of love and food too.
I want to share a Kenyan christmas cuisine with you so you see how we doi it:
This is coleslaw,made using cabbage, grated carrots and mayonnaise
Fried rice. Made by frying peas and diced carrots and adding rice to the mixture
Beef and mushroom stew.
We call this " Mukimo" in our mother tongue. Its a staple food in our community/tribe. The ingredients include boiled green maize, green peas, potatoes and pumpkin. Preparation: Boil all ingredients together then mash them till you get what you see in the pic. You can enjoy it with beef stew or on it own. Yum
Chips Masala.
This is Pilau. Its more of an Indian recipe. But when you have parties especially weddings in Kenya, this is a must have dish.
Fried Fish
Christmas is not Christmas without grilled goat meat which we call "nyama choma". It is eaten usually eaten after all the other food has been consumed. We buy a whole live goat, it is slaughtered in the morning. We grill most of the meat over an open fire including the liver and kidneys. The intestines are removed and washed then stuffed with meat or cooked blood to make a sort of German sausage or Boerewors.. we call in 'Mutura'. Very tasty. the head and legs are boiled to make soup. See!... we leave nothing to waste. haha.
