How to stuff a biscuit (Eggs, Bacon, and Cheese here)

This morning was a bit on the nippy side here in Tennessee this morning. Great morning to get a fire going. Since I don't do the 9-5 thing anymore I have time. However, I'm lazy and already hungry so I'll just stuff some biscuits with eggs, bacon, and cheese. It'll warm the house nicely and I get to eat. What more could a fella ask for!

These things are awesome. I'm not sure if I saw something somewhere or just figured "let's try it and see what happens" - or how I started stuffing biscuits but I love these things for two reasons;

  • I like eating with my hands Okay, maybe that offends folks, but eating pizza with a fork should be considered a crime so we're even.
  • They're easy to make from prepackaged (probably bad for you) foods which just have to be tossed together, or you can make them from scratch. Think of it as a political lefty righty thing.

Either way, you're gonna love them.

For the bacon, egg and cheese stuffed biscuits you're going to need the obvious...

  • 1 lb Bacon (cut it into smaller pieces for easier handling)
  • 6 Lg Eggs scrambled
  • Cheese of choice and as much as you want (or can fit)
  • 2 cans/rolls Biscuit dough (I just use the store brand stuff) enough for 8 biscuits

Once you have all your gatherings, cut and cook your bacon. You can also prep your eggs to be scrambled. If you're going to add any spices put them into the eggs. A little salt and pepper with a lot of crushed red pepper and garlic is always a good mix. Now cook the eggs.

Let the bacon and eggs cool while you're prepping the biscuits to be stuffed.

No particular way to do this. Just use your imagination. It's biscuits!

I open them up and mash them out. Then I'll do another and use it as a top. However, I've also opened up the biscuit and use it like a hotdog bun. You can do half on bottom and half on top if you like. Go for broke!

Two things I should mention here:

  1. Use parchment paper if you don't like scrubbing dishes

  2. Make sure you don't trash the directions to cook the biscuits. You'll need to use those instructions (+/- a few minutes) to cook your stuffed biscuits.

This batch was 350 f for 17 minutes per instructions plus an extra 5 to get them perfect.

And voila!...

It ain't rocket science, but it is easy and cheap (take that anyway you want) and it's gonna fill you up on a cold day.
