Spicy Apple & Pumpkin Chutney - Recipe

Hey,

I know I promised I won't be sharing another recipe with pumpkin, but I couldn't keep it just to myself.
Cross my heart and hope (not) to die that this is the last one! THIS YEAR!
This chutney is amazing and it's not so difficult to make. You can try it with different types of cheese or meat. I love its sourish, but sweet flavor.

INGREDIENTS for about 2 kg
4 tbs sunflower oil
2 onions chopped
100 g ginger chopped
2 chilly peppers - I used some Carolina Reaper, the hottest chilly in the world...but this wasn't, maybe it was a mutant
4 cinnamon sticks
1 tsp cumin
4 garlic cloves
1 kg pumpkin diced
500 g apples diced
1 tsp turmeric
300 ml apple vinegar
500 g sugar

A long list of ingredients, right?

  1. Heat the oil in a large pan, put together onions, ginger, chilli, cinnamon and cumin. Fry gently for 5 minutes.
  2. Stir the garlic, pumpkin and apples into the onions, then cook for 10-15 mins more, until the onions and apples are soft. Be careful not to crush the apples!
  3. My favorite step: add the turmeric and sugar. The sugar will caramelize the mixture....mmm, it's already delicious...
  4. Pour in the apple vinegar, season with 2 tsp salt, then bring the chutney back to a simmer. Cook, stirring regularly, for about 30 mins.

Now, take the cutest jars you have in your house. Add the hot chutney into jars and seal. Your chutney is ready!
Unfortunately, I used the ugliest jar! :) The beautiful ones are with red onion chutney.
