The recipe of today is quite easy and vegetarian. Lately, I love to cook mostly with veggies, I do not know if it's because the weather, of autumn with its colors...

Ingredients

  • 1 eggplant
  • 1 can of chickpeas
  • parsley
  • 1 onion
  • tomatoes chopped
  • salt and pepper
  • chilli flakes
  • a pinch of cinnamon
  1. Cut the eggplant, chop the onion.
  2. Preheat the oven at 200C. In a pan, put all the ingredients, except the parsley.
  3. Leave it to cook for 1 hour.
  4. If the eggplant is soften, your meal is ready.
  5. Sprinkle with parley, a lot of parsley! I guess you could use coriander (if you like it), but I hate it with all my guts! It tastes like soap.
