The recipe of today is quite easy and vegetarian. Lately, I love to cook mostly with veggies, I do not know if it's because the weather, of autumn with its colors...
Ingredients
- 1 eggplant
- 1 can of chickpeas
- parsley
- 1 onion
- tomatoes chopped
- salt and pepper
- chilli flakes
- a pinch of cinnamon
- Cut the eggplant, chop the onion.
- Preheat the oven at 200C. In a pan, put all the ingredients, except the parsley.
- Leave it to cook for 1 hour.
- If the eggplant is soften, your meal is ready.
- Sprinkle with parley, a lot of parsley! I guess you could use coriander (if you like it), but I hate it with all my guts! It tastes like soap.
