做法
鸡源的选择至关重要,德州市四效的农家鸡为最佳来源。在制作上,选鸡考究,工艺严谨,配料科学,加工精细,火上功夫,武文有行。名曰扒鸡,扒,乃文火焖煮时,用经年循环老汤,配以砂仁,丁香,玉果,桂条,白芷,肉桂等二十多种药材烹制。
一是宰杀:将750克以上的活鸡割断气管,放净血,用65摄氏度左右的热水烫,褪掉鸡毛,剥净腿、嘴、爪的老皮,然后从臀部剖开,摘去内脏,沥净血水;
二是整形:将鸡双腿盘起,双爪插入腹部,两翅从嘴中交叉而出,形似“鸭浮水面;
三是烹炸:将鸡全身涂匀蜂蜜水,然后入沸油锅中炸制,至鸡身呈金黄色时捞出;
四是配料焖煮:煮前先在锅底放一铁箅,以防糊锅,再将处理好的鸡按老嫩排入锅内,配以料汤,防止鸡浮,煮时用旺火煮,微火焖,浮油压气,雏鸡焖6至8小时,老鸡焖8至10小时,扒鸡焖煮以原锅老汤为主,并按比例配制新汤,配料有花椒、大料、桂皮、丁香、白芷、草果、陈皮、三萘、砂仁、生姜、小茴香、酱油、白糖、食盐等十六种,这样制出的扒鸡,外形完整美观,色泽金黄透红,肉质松软适口。
