Escabeche (Sweet and Sour Fish)
Ingredients
Fish fry:
⁃ 2-3 lbs Ta’ape or Blue Stripe Snapper
⁃ 1/2 cup flour
⁃ 1/4 cup cornstarch
⁃ 1 tbsp garlic powder
⁃ 1 tsp salt
⁃ 1 tsp pepper
Sweet and Sour Sauce
⁃ 1 large onion, sliced
⁃ 1 large red bell pepper, sliced
⁃ 1 cup pineapple chunks, juice included
⁃ 3/4 cup sugar
⁃ 1/2 cup apple cider vinegar
⁃ 1/4 cup soy sauce
⁃ 1 cup water
⁃ 1/2 cup ketchup
To thicken gravy
⁃ 2 tbsp cornstarch mixed with 1/4 cup water
How to:
▪ Clean fish. Drain well.
▪ In a ziplock bag, add flour, cornstarch, garlic powder, salt, and pepper.
▪ Place fish in the bag and shake to coat. Shake off excess flour.
▪ In a medium skillet, heat the oil and fry fish until brown. Remove the fish from the pan and set aside. Discard oil.
▪ In the same skillet, sauté onions until soft and add in red bell pepper sauté for another 2 minutes
▪ Add in the rest of the sauce ingredients and let simmer for about 5 minutes.
▪ Then add water cornstarch mixture to thicken sauce.
