Creamy Lemon Garlic Butter Chicken
Ingredients:
▪ 5 pounds chicken
▪ salt and pepper
▪ 2-3 tbsp olive oil
▪ 1 stick of butter
▪ 10 to 15 cloves of garlic, crushed and peeled
▪ 2 cup chicken broth
▪ 1/2 cup lemon juice
▪ 1/2 cup heavy cream I use low fat 2% evaporated milk and it works just fine
▪ 1 tbsp thyme
▪ 1 tbsp rosemary
▪ 1/2 parmesan cheese or more according to your taste
▪ 1/2 of small bag of spinach
- Heat olive oil in a large fry pan over medium/high.
- Generously coat chicken with salt and pepper.
- Fry chicken in oil until both sides are brown.
- Add butter and garlic. Cover and simmer for about 5 minutes.
- Turn chicken over and add chicken broth. Cover and simmer for another 15 - 20 minutes.
- Add lemon juice and cream. Simmer for another 5 minutes uncovered. Don't forget to turn chicken over or baste chicken with liquid.
- Add parmesan cheese. Turn chicken over or baste with liquid.
- Add thyme and rosemary. Let simmer for another 5 minutes. Turn chicken over or baste with liquid.
- Add spinach. Cover simmer for 5 minutes.
