Premiering new section this time dedicated to one of my passions, vegetarian food and vegan food, here you can enjoy delicious recipes but also learn the energy and nutritional value depending on the ingredient, this week I chose this recipe for Mexican vegan food, it's about an enchiladas of potatoes and beans that this delicious, accompany me .

Ingredients.

500 grams of potatoes, peeled and diced
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon ketchup
500 grams of green tomatoes (tomatillos)
1 onion, coarsely chopped
1 bunch cilantro, chopped
16 corn tortillas
1 can (400 grams) whole bay beans, drained
375 grams of fresh cheese

How to
Preheat the oven to 200 °C. Season potatoes with cumin, chili powder, salt and ketchup. Mix well and place the potatoes in a greased refractory dish. Bake in a preheated oven for 20 to 25 minutes, until potatoes are tender.

Meanwhile, cook the green tomatoes and onion in boiling water until the tomatoes change color. Remove from heat, drain well and let cool a little. Then, liquefy tomatoes and onion with half of the cilantro, until a thick purée.

  1. Heat a generous amount of oil in a small skillet. Pass the tortillas through the hot oil for a few seconds to soften them, but be careful not to brown them. Remove excess fat with paper towels.

  2. Mix the potatoes with the beans, half the cheese and the remaining cilantro. Fill tortillas with this mixture and roll up. Arrange the stuffed tortillas in a greased refractory and bathe with the green tomato sauce. Sprinkle with the rest of the cheese.

  3. Bake for 20 minutes or until very hot.
