Rice with green Asparagus and Mushrooms

It is a vegetable paella, but with which they bind to perfection, such as green asparagus and mushrooms, giving a great aroma and flavor with everything that is cooked. I hope you like it and enjoy doing it.

Ingredients

♡ 400 gr. round rice

♡ 900-1,000 ml of broth, made with a chicken carcass, a leek, a green pepper and 1 ripe tomato. 30 minutes of cooking and the broth is ready.

♡ 1 red pepper

♡ 2 green frying peppers

♡ 1 bunch chopped asparagus

♡ 350 gr. fresh mushrooms

♡ 1 teaspoon sweet paprika

♡ Salt and pepper to taste

♡ The pulp of 2 ripe tomatoes

♡ 3 or 4 tablespoons extra virgin olive oil

♡ Rosemary twigs

It is a very simple dish. The broth, as we have said before, we take it out of some chicken carcasses and some vegetables with the cooking of 30 minutes. Then we strained and reserved.

In a paella over medium heat put the oil and put the peppers cut into cubes, brunoise, and let sauté for 3 or 4 minutes. Put the asparagus and a couple of minutes more.

Now add the mushrooms, with a little salt so that they sweat and release the juice.

Now, two or 3 minutes later, put the tomato and let the broth be consumed, add the rice and paprika and sauté for at least 1 minute, stirring with a wooden spoon.

Add the broth, add salt and pepper and leave to cook for 8 minutes, without moving the rice.

Lower the heat and let it cook for 7 more minutes over medium/soft heat.

Turn off the heat and place a few sprigs of rosemary, cover with rag paper, to absorb excess moisture and let stand about 5 minutes.
