Chicken Estofado
If you are a fan of our famous adobo and afritada, then you will appreciate estufado or estofado which is a cross between the two.
Estofado, a known Filipino dish, originated from the word estofar which means stew or pot-roasted or to braise in a covered pan or in a pot. Basically, estofado was named as such because of how it is being prepared.
The wonderful taste of estofado can be credited to the rich fusion of the 3 cultures in it; the cooking method was influenced by the Spanish while the mixing of the seasoning was from the Chinese and the adding of local ingredients (such as saba and potatoes) was an initiative of the Filipinos.
Estofado can either be pork or chicken and the ingredients range from tomato sauce to vinegar and soy sauce with the addition of saba, carrots, potatoes, bell pepper and pineapple.
