Hello Kitty Cookies!

I finally made the Hello Kitty cookies today! I wasn't sure if I should do it because the last time I made cookies with royal icing was a few years ago. Decorating cookies with royal icing is very challenging so I was very nervous and a bit afraid the cookies would be ruined. If you haven't done something for a while, you might forget the technique.

I made these Hello Kitty cookies using the 3D Hello Kitty Cookie cutter
and the 3D Hello Kitty Cookie Stamp that I made myself.

Ingredients

185 gram all purpose flour

125 gram sugar

125 gram butter

1 small egg or half of a XL egg

Few drops vanilla flavour

1 sachet of vanilla sugar

Instructions

All ingredients can be prepared cold because you are going to knead the cookie dough with your hands.

Put all ingredients in a large bowl and start kneading till everything is mixed well. We don't use baking powder because baking powder make the cookie shape spread, so the shape will not stay. Baking powder is more for cakes/cupcakes but not for cookies like these.

Take a large ziplock bag and put the dough inside and let it chill for couple of hours in the fridge.

For cutting the cookies you will need a rolling pin with two rubber rings, silicone mat and baking paper. When you use a silicone mat, the cookie dough will not stick on it when rolling it out. Using baking paper will prevent the dough sticking on the rolling pin.

Cut the Hello Kitty shapes out of the cookie dough using the Hello Kitty cookie cutter and stamp.

Put the Hello Kitty cookie dough on a baking sheet covered with baking paper. Then let it chill in the fridge for couple of hours. The reason why I do this is to get the exact same shape. First, I don't use baking powder, then I let it chill after making the dough and later I let it chill again in the fridge after cutting out the Hello Kitty shape cookie dough.

Pre-heat the oven at 170 degrees Celsius and wait for 10-15 minutes before you bake the cookies. Bake the cookies for about 25-30 minutes depending on your oven.

Take the cookies out and put them on a rack after 10 minutes. Leave them until they are totally cooled off.

For the decoration I used a royal icing mix with food colouring. I also need some piping bags+ tips and a scribing tool.

Mix 450 gram royal icing with 55 ml water for 7-10 minutes. Later on, add 2,5 teaspoon water and mix it evenly.

Mix partly of the royal icing with pink food colouring. Take a piping bag and pour in a part of the royal icing mix in to the piping bag. I used Wilton tip 2. Close the piping bag with an elastic and start piping the outer bow. After 10 minutes, finish the rest of the bow, the centre.

This is how the bows look like. It is important to start either with the middle part of the bow or the sides of the bow to get this 3d look.

Take a big part of the royal icing and pour it in to a new clean piping bag with a tip number 2 or 3. I couldn't find my piping tip number 3 so I used number 2.

Cover the rest of the cookies with white royal icing. They don't look so good as I wanted :-(. It has been a long time that I made royal icing cookies. I just need to practice more. Practice makes perfect!

After 3 hours I made black royal icing for the eyes, and whiskers. I used a ziplock bag and made a very tiny hole. They started to look so cute! I suddenly forgot the not-so-nice-looking white royal icing.

For the nose I mixed a bit golden yellow food colouring with the remaining royal icing I had.

With a scribing tool you can make an oval shape of the nose.

I an very happy with the result of these Hello Kitty cookies! Working with royal icing is very challenging and you can not rush decorate these adorable cookies. You need a lot of patience.
