Comfort Bake - Fruit Crumble

Do you have some deserts that bring childhood memories and give you that fuzzy feeling around your heart?

For me one of those recipes is yeast cake, a reminder of my grandma and time when I was carefree child. I love the smell when it is baking in the oven, house automatically speaks comfort. It can be simple slice to enjoy with your afternoon tea, but in a region of Poland that I come from, it is given to friends and family as a wedding gift from the parents of engaged couple, usually done few days before the big day.

It is made with special care and the best ingredients are used. Most commonly it will be cheese or poppy seed, but the real deal is in the crumble that goes on top, it must be the perfect amount to accompany the cake and since the dough is not sweet it is the vital element in bringing it all together. When I was little I used to steal it and then my mom would find ‘naked’ cakes 😉

I will share with you a recipe with a fruit topping since I wanted to use some of the plums that are in season at the moment and I actually prefer them this way but I will try in the future post one with cheese as well.

For dough you will need:-

(originally fresh yeast is used but I put dry one since it is easier to find in Australia)

  • 2 eggs lightly beaten
  • Pinch of salt
  • 100g melted butter plus one cup cold milk
  • 500g flour
  • 12g yeast

Place all ingredients in mixer bowl with a hook attachment and mix for at least 10 minutes until comes together and is smooth and shiny.

Cover with tea towel and leave to rise for around 1,5 hours.

For the crumble combine 100g of plain flour, 50g icing sugar and 60g butter mix by hand until crumbly texture. Once ready place in the fridge until needed.

For the topping I used plums and sour cherries and sprinkled them with handful of raw sugar, followed by crumble.

It's so nice to see that you have the same memories pop up in your head when thinking about fruit crumble. It has always been a staple at our house for any party, celebration or family dinner. Something that is so easy but oooh soo deliciousssss! I really like this recipe and it is a little different from what we used to make, but I am definitely going to try this recipe! It looks delicious :)
