Baked Chicken & Broccoli
This is one of those easy kinds of recipes that yield amazing results. You’d never guess how much flavor is packed in something as simple as chicken and broccoli. The list of ingredients are all things that you probably have on hand at this very moment. The trick to making this dish burst with savory, tender, mouthwatering flavor, is all in the way you bake the chicken.
Usually when I post a recipe that involves baking chicken, I’ll include a simple list of steps that will ensure perfectly juicy chicken breasts every time. So, here’s that list!
- Brine the chicken breasts for 15 minutes by submerging them in cold water with 1 tablespoon of vinegar.
- Preheat oven to 400 degrees.
- Drain the chicken breasts and pat them dry with paper towels.
- Rub each chicken breast with olive oil. Then sprinkle with a mixture of garlic salt, black pepper, paprika and onion powder.
- Place chicken breasts side by side in a baking dish. Bake for about 35 minutes.
- Remove from oven and let rest about 5-10 minutes before slicing.
For this particular recipe, since there is broccoli involved, I did things a little differently. Broccoli doesn’t take as long as chicken to roast so I didn’t want leave it in the oven for 35 minutes and risk it getting burned. Since broccoli really only requires about 20 minutes in the oven at a temperature of 400 degrees, I decided to bake the chicken ALONE first. After following steps 1 through 4 from the list above, I then baked the chicken for about 15 minutes. Then I opened the oven doors and pulled the baking pan out just enough to pour the broccoli all around the chicken. I then returned the pan to the oven and baked everything together for an additional 20 minutes. Both the chicken and broccoli came out picture-perfect! Juicy, fully cooked chicken breasts and seamlessly roasted broccoli without a burn on them! I was pretty happy.
This particular recipe will serve about 2-3 people but you might be able to push it to 4 if everyone eats small portions and you’re serving something else on the side. It’s definitely a light, healthy meal to incorporate into your diet, but since it tastes so darn good, you might find yourself craving more.
