BROKOLISUPPE WITH GREEN CURRY
Broccoli, Everyday Vegetable Number One, appears here in a new and exciting outfit. This soup is full of delicious flavor, it is smooth with chickpeas and is gluten-free.
INGREDIENTS
4 SERVINGS
1 piece of broccoli
1 large yellow onion
2 boats garlic
1 piece of parsnip
2 tablespoons sunflower oil
2 tablespoons green curry paste
2 box light coconut milk a 400g
1 piece of vegetable broth (dice)
4 dl water
150 g baby spinach
1 box of hermetic kikers a 400g
1 teaspoon salt
1/2 tsp grated pepper
1/2 pot of fresh mint
1 dl coconut flakes

THIS IS WHAT YOU DO
Share broccoli in bouquets. Remove the roughest parts of the stem and cut it into pieces.
Roughly onion onions and garlic and peel and cut parsnips in coarse pieces.
Heat oil in a saucepan and fry broccoli, onion, garlic and parsnip until it is soft and glossy. Add curry paste, coconut milk, broth and water. Boil and simmer until the vegetables are soft. Mix in spinach and chickpeas.
Use sticks and run the soup smoothly. Add a little more water if the soup becomes too thick. Season with salt and pepper.
Shake coconut flakes in a frying pan until golden.
Server soup topped with minced mint and coconut flakes.
