THE PABELLÓN CRIOLLO / Typical Dishes and Culinary Wonders of VENEZUELA # 7

Greetings my dear friends of steemit, today I will continue with a series of publications related to the preparation of typical dishes and culinary wonders of my country, produced with a variety of fruits, plant proteins, animals or vegetables that our nature provides us. That is why I invite you to read these publications where I will provide a very detailed content, to know some products and traditional dishes that you can find in my beautiful country, with which you can fall in love and delight with each of the flavors of these great recipes that I put at your disposal.

As I mentioned in previous publications, Venezuelan gastronomy is very varied, it shows our culinary wealth product of our miscegenation throughout the length and breadth of our lands; it is a wide range of options and cultural mixes, resulting in a great explosion of flavors, colors and aromas, which characterize my country for having a culinary expression that stands out, with diverse and original dishes, which vary according to the region, and according to the ways of life of its inhabitants. We leave to your palate the pleasure of enjoying the great diversity of aromas and flavors, so let yourself be conquered with the delicious and traditional Venezuelan food.

Today I will talk about The Pabellón Criollo:

EL PABELLÓN CRIOLLO:
It is a typical dish with a Venezuelan stamp prepared in many of our homes since it is part of our cuisine, and its aroma, taste and color are unique. This succulent dish is composed of four basic elements which are: black beans, mechada meat, rice and fried banana slices, but it can vary depending on the Venezuelan region in which you are, sometimes the Venezuelan pavilion can be accompanied with white cheese Llanero, particularly I like to accompany it with avocado and arepitas, other people like it with fried egg on top, but always keeping the unique and pure essence of the national dish.

The pabellón is very easy to make, but its preparation takes a bit because each element is prepared separately, but it is still worth spending some time on this delicacy. Once the components are ready, we join them to achieve a surprising mix of flavors; without a doubt, it is the perfect combination in one dish; and you know which is the best part ?, which is very healthy, since it provides essential nutrients for a healthy and balanced diet.

Yes now! Without further ado I will explain the procedure for the preparation:

Ingredients To Prepare the Mechada Meat:
500 gr. of beef skirt
1 lt. of water.
5 Onions.
3 tomatoes without seeds, cut into small squares.
5 garlic cloves minced in strips.
6 finely chopped chillies without seeds.
Salt to taste.
Adobo or sasonatodo to the pleasure.
Oil or oil onotado to fry the dressings.
English sauce.

Meat preparation:

  1. In a pressure cooker place 1 ½ liter of drinking water, place the 500 grs. of meat, add 2 onions and 2 red peppers cut in half and salt to taste. Cover the pot and cook the meat over medium heat for 1 hour. This cooking must be done until the meat softens.
  2. Then very carefully, we remove the meat from the broth and let it rest a bit to begin to break it into thin strands, this we do using our hands to separate the strands. Recommendation: Do not throw away the broth this you can save it for use in the preparation of caraotas, and if the meat has a little fat you should discard it.
  3. In a large cauldron, over medium high heat, heat 2 tablespoons of vegetable oil or oil to fry the finely chopped onion, together with the garlic, sweet pepper, cook for 10 minutes and then add the chopped tomato.
  4. Once stir-fried the dressings add the meat and mix well, add marinade, the English sauce, and continue cooking for 10 minutes more, but on low heat always attentive so that it does not dry all the broth of the meat.

Ingredients To Prepare the Caraotas:
2 cups of black beans.
1 Finely chopped onion
4 Cloves of finely chopped garlic.
1 Paprika
2 Tablespoons of sugar or paper (this is optional only for people who like to eat sweet carota).
3 tablespoons of butter or margarine.
1 Tablespoon of oil.

Preparing the beans:

  1. One day before the preparation you should soak the beans together with a little baking soda.
  2. Then we throw the water where we soak the beans and proceed to wash them, drain and in a pot melt the butter with the oil, fry the onion, garlic, paprika, and sweet pepper. We incorporated the caraotas and the broth where the meat was cooked. If it is your preference to eat sweet caraos, it is the right time to add sugar or paper. I particularly leave them without sugar and everyone who wants to give him the sweet touch he prefers when serving his food.
  3. Cover the pot and cook over low heat, until the beans are soft.

Ingredients To Prepare Rice:
1 cup of rice.
2 cups of water.
½ Finely chopped onion.
1 Chili without seeds.
2 Tablespoons of Oil.
1 tablespoon of salt.

Rice Preparation:

  1. Heat a pot with 2 tablespoons of vegetable oil over high heat, add the onion and sweet pepper and sauté for 3 minutes, add the rice and sauté for 3 more minutes.
  2. Add the two cups of water and salt to taste, raise the heat until it boils to cover. Continue cooking until the liquid has completely evaporated, lower the heat to a minimum and cook for 15 minutes covered, until it is dry and off.

Ingredients To Prepare Bananas
1 Mature banana.
Vegetable oil.

Banana preparation:

  1. Peel the banana and cut it lengthwise to make slices.
  2. In a pan over medium heat, fry the plantains or slices until golden brown. Then we take them out and place them on an absorbent paper.

To serve it is necessary to place on a plate a portion of mechada meat, a little caraota with its respective teaspoon of sugar, white rice, 2 or 3 slices, in my case as I like to eat it with avocado, I cut a few slices of avocado, rallo a little white cheese llanero and finally to complete the dish I add a rich arepita, I assure you that with this delicious dish you will be very satisfied and you will suck your fingers.
