British Scientists Link Overcooked Starchy Food With Risk of Cancer
British scientists recently gave a warning of a potential cancer risk associated with overcooking starchy food.
The scientists say that food items like potatoes and bread, when cooked at very high temperatures for a long period of time, can increase the risk of cancer in people who consume them on a regular basis. According to the FSA, British Food Standards Agency, they say that the food produces a substance called acrylamide and this has been found in animal studies to increase the risk of cancer.
Scientists suggest that people who consume these foods on a regular basis should instead choose to cook them at lower temperatures. And they collectively assert that we should be concerned about acrylamide and its potential to cause cancer. They even suggest that when cooking other root vegetables that consumers should aim for golden brown colors and opt to stay away from foods that have been burnt or extremely browned, they say.
There's Bigger Concerns Than Over-cooked Bread...
Critics say that there are many other food items out there that we should be concerned about as far as cancer risks. And they suggest that before worrying about over-cooking our potatoes, that we should be more concerned about things like drinking, smoking, being overweight, and so on.
Researchers say that thus far scientific evidence has demonstrated that the acrylamide has the potential to interact with our DNA and therefore could be linked to cancer. But for now there isn't much research available which links acrylamide in humans to cancer.
For now, the Word Health Organization labels acrylamide as a probable human carcinogen and so it's in the same category of worry as things like eating red meat or using anabolic steroids.
Starchy foods like bread and potatoes etc are also known to promote inflammation in the body, and since many chronic illnesses are rooted deeply in prolonged chronic inflammation, it makes sense why many people who would be concerned about that, are trying to get these items out of their regular diet and opt for a more Mediterranean diet that's mostly vegetables, fruits, and healthy fats etc.

Fun to see how local things still are. It was a Swedish team that found this, and the reports and discussions about acrylamide has been around in Scandinavia for a couple of years...

Nice find @doitvoluntarily, fresh and raw is purportedly the healthiest... but then too, enjoyment is part of life.
That and cancer was low in my parents generation, even though they ate the "Bad Stuff" (that tasted WOW).
I don't trust the "scientists" anymore. In a year or two they'll be saying the exact opposite. I'm going off now to have a massive belly busting fry-up, followed by a lovely smoke!
