QUINOA & PEANUT bars

Totally vegan bars. Nutritious and easy to make. You can keep them in the fridge up to one week. But can also keep them in the freezer up to one month.

This portion will give your 12 bars One bar contains 210 g calories, 35 g carbohydrates and 4 g protein.


Ingredients:

Cook the quinoa the day before. Here I use red, but any color will do.

- 2 dl. dates without stone
- 1 dl. peanut butter
- 1/2 teaspoon vanilla sugar
- 3 dl. oatmeal
- 3 dl. pre-cooked, cold quinoa
- 1 cup nuts / almonds
- 1/2 dl. dark chocolate


Instructions:

Have the dates in a food processor and cut into small pieces. Add peanut butter and vanilla sugar and mix. Add quinoa, oatmeal, nuts and chocolate. Mix everything for a dough.

Use a baking pan approx. 20 x 20cm. and press the well. Leave in the fridge for at least one hour. Then you cut into 12 bars. Wrap them in aluminum foil or plastic and keep in the refrigerator.



Ready to try. Easy to bring with you if you need a snack :)

wow, those look super tasty, will try them out!

That sounds like a really great snack to take with hiking. Does the chocolate need to be melted or chopped up first? And what makes them stick together? Also, do you think it would work without oatmeal as I'm not a massive fan of oatmeal.

The chocolate needs only to be chopped.
