PURPLE SALAD – with lentils and feta cheese
This salad will give you the taste of both sour and sweet, crisp and soft, colors of purple and green... You can satisfy both palate and eyes :) Lentils is the main ingredient. Just like beans, full of proteins. This portion will be enough for 2 persons.
Dressing:
- 1 tablespoons balsamic vinegar
- 4 tablespoons of olive oil
- salt & pepper
Ingredients:
- 3 dl of precooked green lentils
- 1 dl. red cabbage, which has do be shreded as thin as possible
- A handful or two of mixed lettuce leaves
- 50g. feta cheese in small pieces
- 1 apple choped into very fine slices
- a few black berries
Instructions:
- cook the lentils and make sure they are cold and all the water is gone
- mix lentils with the dressing
- then ad the other ingredients to the lentils
- decorate with a few of the black berries after you put it in two bowls
