Here is my entry for, Cook with Us #7 - Cookie Jar / My Celebration Cupcakes.

Thanks so much for this great contest hosted @cookwithus that brings, all the food lovers and budding bakers, together.

So appreciate the opportunity to be part of this competition.

Great to see all the creations that inspire us, to be better cooks, too!

Celebration Cup Cakes

These cupcakes have been tweaked from an old recipe book. Love to make something different and present it on a lovely plate or dish.
The icing was made a little thinner by adding a teaspoon of oil and a little milk, gives that glossy finish.

Serve for a special birthday or anniversary celebration!

Nothing like a mouthwatering bite after a cup of tea, or even to take on a picnic. Cupcakes are also so easy to bake with minimum fuss!

When I was a kid I will always remember the smell of cakes baking in an oven, especially the vanilla and cinnamon with chocolate..an aroma that never fails to disappoint!

Ingredients

4 oz butter
5 oz sugar
1/4 teaspoon salt
1 3/4 cups cake flour
1 teaspoon cinnamon powder
2 eggs
2 teaspoons baking powder
1/4 cup milk
2 tablespoons cocoa mixed with a little hot water
1 teaspoon vanilla essence
1 teaspoon caramel essence

Method

Cream the butter and sugar together. Add the sifted dry ingredients alternately with the eggs and milk.
Lastly add the vanilla and caramel essence. Put into patty pans and bake at 375 degrees F for 10 to 15 minutes.
When cold spread with any chocolate icing. I sprinkled some icing sucar through a sieve to give it a festive look.
