Wow! Most excellent and thorough article on apples... one of my favorite fruits, and especially since moving to Washington state where so many good apples are grown and can be had when naturally ripe. Think "Honeycrisp" is probably my favorite, even if not native to here they grown many of them here... often among the first to appear when "new crop" season comes.
