Rajma is a popular Indian dish made with kidney beans cooked in a flavorful gravy of onions, tomatoes, and spices. It's usually served with rice, making it a hearty and filling meal. Here's a simple recipe to make Rajma:

Ingredients:

1 cup dried kidney beans, soaked overnight and drained
2 onions, finely chopped
3 tomatoes, finely chopped
1 tbsp ginger-garlic paste
2 green chilies, slit
1 tsp cumin seeds
1 bay leaf
1 cinnamon stick
2-3 cloves
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala powder
Salt to taste
2 tbsp oil
Fresh coriander leaves for garnish
Instructions:

Heat oil in a pressure cooker or a heavy-bottomed pot. Add cumin seeds, bay leaf, cinnamon stick, and cloves. Sauté for a minute till fragrant.
Add the finely chopped onions and sauté till they turn golden brown.
Add the ginger-garlic paste and green chilies. Sauté for a minute till the raw smell goes away.
Add the chopped tomatoes and cook till they turn mushy.
Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Add the soaked kidney beans and mix well with the masala. Add 3 cups of water and mix well.
Cover the pressure cooker or pot and cook on medium heat for about 4-5 whistles in the pressure cooker or until the kidney beans are cooked through if using a pot. If using a pot, it may take 45 minutes to 1 hour for the beans to cook.
Once done, let the pressure release naturally or if using a pot, let it simmer till the curry thickens to your desired consistency.
Add garam masala powder and mix well. Garnish with fresh coriander leaves and serve hot with rice. Enjoy your delicious Rajma!
