Quinoa pulao
Quinoa pulao is a healthy and delicious dish that is made with quinoa, vegetables, and aromatic spices. Here's a simple recipe to make Quinoa Pulao:
Ingredients:
1 cup quinoa, rinsed and drained
1 onion, sliced
1 carrot, diced
1/2 cup green peas
1/2 red bell pepper, diced
2 tbsp oil or ghee
1 tsp cumin seeds
1 cinnamon stick
3-4 cloves
3-4 green cardamom pods
1 bay leaf
2 cups water or vegetable broth
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Heat oil in a pan and add cumin seeds. When the seeds start to sizzle, add the whole spices (cinnamon, cloves, cardamom, and bay leaf) and sauté for a minute.
Add the sliced onions and sauté till they turn translucent.
Add the diced carrots, green peas, and diced red bell pepper. Mix well and cook for 2-3 minutes.
Add the quinoa and mix well with the vegetables. Cook for 1-2 minutes.
Add 2 cups of water or vegetable broth and salt to taste. Mix well and bring it to a boil.
Lower the heat, cover the pan and let the quinoa cook for about 15-20 minutes, or until all the water is absorbed and the quinoa is cooked through.
Once done, remove the pan from the heat and let it rest for a few minutes. Fluff the quinoa with a fork and garnish with fresh coriander leaves.
