Ulog #82: Mutton Ribs!

This has got to be the most raved item I've ever put up on the menu of my food truck and I have to say, I'm so happy that people enjoy this as much as I do.

I actually got this idea from a Chinese Muslim place that operates around my neighbourhood. They have a boiled mutton and fried mutton dish that's absolutely amazing.

I figured that I'd try the same method of boiling it and then frying it as well and my first try on it turned out to be a really great success.

So instead of using Chinese herbs and spices that they use, I tried to go a more American and Western influenced route instead with marinades and all things barbecue.

Last week I introduced a burger version of this with the meat and fat pulled off the bones and stuffed between two buns with barbecue aioli. It was absolutely amazing to say the least.

A fan of ours ate it and was really ecstatic about how awesome it was. She even gave a really good suggestion of adding in jalepenno slices to give the burger a kick and I think I might use that idea this week.

If you haven't tried mutton ribs, try to get your hands on some. It's a great alternative to lamb and more inexpensive than it. I promise you it's worth the effort.
