Ulog 7: Broccoli Fritatta for Lunch
Nowadays my wife cooks a lot and almost always takes care for lunch asides from my mum. But sometimes they are both out and I have to do the cooking duties.
Made this last week for one of our lunches and my wife said it was really really good. My 3 year old son ate his lunch without complains either so I think I did it right and made something that I'll be making again soon enough.
This was a simple dish to make as well as an economical and inexpensive one too. And another plus was that it's a all-in-one pan dish which makes cleaning a whole lot less work. Gotta love food that you can cook with minimal clean-up.

How to make it
Here's how you can make my version of 'Broccoli Fritatta':
Started out with chopping up half a broccoli head. I'm using only the florets for this recipe. I start off sautéing 3 cloves of sliced garlic with some vegetable oil (you can use butter) until lightly browned and fragrant. Next I add in the broccoli florets and season them with salt and white pepper powder for about 1 minute. I then add in some water and cover it with a lot to let it steam and soften, about 2-3 minutes.
Beat 6 eggs. This will serve about 6 portions. I used local fresh eggs here and add in a tablespoon of butter and some salt, coarsely crushed black pepper and white pepper powder for seasoning and further enhancing that white pepper flavor. White pepper is a great natural way to elevate flavor. It sort of even tastes like chicken stock powder which really masks as a really inexpensive flavor bomb.
Next add in the eggs and lower the heat. The reason for the low heat is so that the eggs cook through without burning. If your heat is on high, it'll cook the surface of the eggs too quickly leaving the middle portion watery which you won't be able to flip the fritatta. So low heat for about 3 minutes and then flip it when the middle gets slightly firm. After the flip, turn off the heat and let it cook off the residual heat from the hot pan.
I served it with white rice but you can serve it with cream cheese or some mash potatoes. It's simply delicious with the toasty nutty taste of the broccoli and the white pepper and garlic seasoned omelette. Really makes for a great lunch!
