Ulog #233: Catering for Petronas event
Last Friday we had a last minute catering gig that called us in the evening on Thursday. Me and my brother scrambled to go shopping for ingredients and being already pass 5pm, it wasn't so easy to shop for ingredients.
Most of our suppliers were already closed by then and those that were still open already ran out of the ingredients we needed for the menu. But somehow, doing this for the past 6 years we've gotten pretty good at shopping last minute. Not an ideal situation but we managed to hustle and got all the ingredients we needed.
Last minute shopping early the morning was also needed and we rushed for this 2pm catering on the day.
I did the wings for this event and it was an order of 100 wings.
I chopped it up into wings and drummets and marinated them overnight with salt, black pepper, sriracha, and smoked paprika. Because the wings are so fatty, I didn't marinate them with oil but you could if it was for grilling. I oven baked these so it was going low and slow and I managed to achieve a very juice piece of wing as well as a crispy exterior.
I oven baked it at a 150 degrees celsius for about 30 minutes then turning off the oven and leaving it in for another 15 minutes. The residual heat ensures that you don't overcook the wings and dry them out.
After cooking them I toss them in a tangy, sweet, and spicy wing sauce that has become a favorite among our customers. All that served up in a bunk pan and you get yourself a perfect looking dish just waiting to be devoured.
