Nilagang Baboy : The Philippines' Pork Stew
There are only two seasons in the Philippines; the dry and the wet. The rainy season starts in June, when school opens, and poses a great challenge to students to rise early from the warmth of their beds. I myself, do not fancy the rain, and so I try to make it more bearable as much as I can by comforting myself with food. One of my favorite dishes for this sweater weather is Nilagang Baboy or Pork Stew, which I learned to prepare since I was in high school. Unlike Sinigang, this is something that I am used to because it is a staple dish in my mother's kitchen.
What I use:
- Pork Belly
- Pork Ribs
- Onion
- Onion Leeks
- Whole Peppercorn
- Potato
- Cabbage
- Chinese Cabbage
- Parsley
- Salt
- Pork Broth
Like many home-made dishes, you can choose which vegetables to add. I've tried it with squash, but these days, I usually use potatoes since that's what my daughters prefer. Cooking it is pretty straightforward. Combine pork belly, pork ribs, onions, the white part of onion leeks, whole peppercorn, and salt with 8 cups of water. When it boils, add potatoes. When potatoes are soft, add the leafy vegetables then turn off the heat. Enjoy while soup is hot.

Our school open in rainy season, too. (start in mid of May.) It’s hard to rise early from the warmth of their beds, I can imagine…

I use rice washing as the base stock when I cooking that dish and almost any dish with a thin soup. Plus fish sauce for seasoning I can just smell it now. I could not just enjoy them now without me cooking.
