Fast&Healthy Cooking #2: Warm "ceviche"

One of my favorite hobbies is cooking. I love food and I love to try new things. For today I decided to prepare cod fish with vegetables.
As I said in my previous post Fast&Healthy Cooking #1: 15 min Gourmet Thai Noodles, I don't like spending a lot of time cooking but I really like making tasty and fancy food.
So for the first part of this recipe, you need just a few vegetables, the ones you like the most, I chose the following ones:
- Red, green, and yellow peppers.
- Mushrooms.
- Onions.
- Broccoli.
You cook the vegetables in a pan for around 10 min with whatever you prefer butter or oil.
After that you pour the vegetables in a container with the cod fish. After that, you just have to spice, for this I used the following ingredients:
- Oil/butter.
- Chicken stock.
- Lime juice.
- Cut lemons.
- Coriander.
- Parsley.
- Salt.
- Sweet pepper.
After that, just bake it in the oven for like 5 min at 180-200 degrees.
I don't measure how much I put of each of the ingredients. I like to experiment and do it by eye.
It's the first time I make this recipe I just came up with and turned to be very tasty. It reminds me like if I were eating a Peruvian Ceviche, but in a warm way. Unfortunately, it is very difficult to prepare ceviche in Denmark 😭 😞.
