Cold cake of red fruits - FAST AND EASY! 24 PORTIONS

Hello Steemians! On this occasion I want to share with you what I learned yesterday.

My mother had the opportunity to train in a six-hour workshop with a group of pretty funny girls and a very professional and really nice teacher. The workshop was to learn how to make cold cakes and marquises. Of course I did not miss the opportunity to learn the recipe of one that I liked the most.

For strawberry jam

1 kilo of strawberries
500 grams of sugar
Juice of 1 lemon
1 cup of water

Preparation of strawberry jam

The first thing you should do is chop the strawberries into pieces and then you must mount over medium heat the 500 grams of sugar with the cup of water and chopped strawberries. You must cook all the ingredients over medium heat, until you achieve the desired thickness (jam style).

Tip - 1: To improve the consistency, you can add half a spoonful of unflavored gelatin. Previously this gelatin should be diluted in a quarter of a cup of water at room temperature in order to hydrate it. Once this hydrates you should add it to the sweet when it is hot.

Sirop to dip sponge cake

Half a liter of water
Half a cup of liquor (RON OR DESIRED LIQUOR)
200 grams of sugar

Preparation of sirop

Bring water and sugar to medium heat. Once the ingredients boil you should lower it and let it cool and then perfume with the liquor.

Custard cream

5 cups of liquid milk
5 egg yolks
250 grams of sugar
5 tablespoons of corn starch
1 tablespoon wheat flour
Essence to taste
1 tablespoon of margarine

Preparation

You must combine all the ingredients (except butter and essence) and beat them in a blender. If you do not have a blender, you will have to beat all the ingredients by hand step by step. Once all the ingredients are united, you will proceed to bring them to medium heat moving constantly so that no lumps form in the mixture or stick to the pan.

Tip - 2: Try to use stainless steel pans, since in the aluminum pans the mixtures turn green.

Tip - 3: The mixture should not be boiled. You will recognize that she is ready once she begins to evaporate.

Once the steam thickens and comes out, proceed to lower the heat and immediately add the margarine at room temperature and the essence of your preference, stir well and store in a plastic bowl.

Tip -4: Cover the mixture with ENVOPLAST by touching the surface of the cream, otherwise it will form a cream and you will have to liquefy again.

We have arrived at the part of the sponge cake, in fact one of the most important parts but it must be left as the last one since once ready you will have to put together the cold cake.

For the sponge cake

300 grams of sugar
10 whole eggs
Essence to taste
300 grams of flour

Preparation

You start with sugar and eggs, then you must add the essence of your preference to obtain a mixture that consists of the point of the letter. (Take the palette, remove the mixture and count to 10. If the mixture does not fall off the palette, this list!)

After the previous mix is ​​ready, you must add flour in an enveloping way. Then you must add the whole mixture in a mold previously greased and floured 28 centimeters wide and take to the oven for 30 minutes approximately.

Once the 30 minutes have passed, you should take out the cake and let it stand until it is cold. It's time to put together your dessert!

To put together the dessert

You should divide the cake horizontally into 3 layers and then vertically into 4 equal parts. Once the cake is divided, you should moisten it with the sirop previously prepared.

Then you must add a layer of cream and then you should decorate it with strawberry jam and edges with custard.
