If you notice extra weight shortly after eating carbohydrates, some of these carbohydrates may have been used to supplement your body's glycogen stores. Carbohydrates can also promote weight gain if carbohydrates cause an increase and decrease in blood sugar levels. But in the end, carbohydrates do not allow you to gain weight unless you take more calories through exercise and activity.
Weight From Stored Carbohydrates
When carbohydrates are digested into glucose, the sugar is transformed into cells that need energy. If the sugar concentration in the blood is too high, the sugar enters the liver and is converted into a form of glucose storage called glycogen. Glycogen builds up in the liver and skeletal muscle, so once the level of activity increases, energy sources are available. Sustainable training can increase storage, but the body can store a limited amount of glycogen. Depending on the capacity and intensity of your activity, the glycogen can be used up in 20 to 90 minutes.
Blood Sugar Swings
There are types of carbohydrates -- white flour, white rice, and foods made with added sugar -- contain small molecules of glucose that are easy to digest, so they enter the bloodstream quickly. When blood sugar rise, insulin is released to remove the extra sugar. While that’s a critical job, it can lead to weight gain.
When there’s too much sugar in your bloodstream, and insulin can’t restore balance by transporting sugar to cells for energy, it sends messages to the liver that it’s time to store fat. After the glycogen stores are filled, the liver turns glucose into triglycerides that are stored in adipose tissue. But insulin doesn’t stop there. It also stops breaking down fat that’s already in storage. So that, insulin prevents you from losing weight while also making you more disposed to to gaining weight.
Glycogen molecules contain a lot of water. The American Athletic Commission reports that every gram of glycogen stored in your body is attached to 2.7 grams of water. This is different from water retention. When you retain moisture, the water is trapped between the cells and gives you the impression of swelling. Water in glycogen is part of its molecular structure. But water still adds weight, and when you load carbohydrates and reload the glycogen store, it can add 3 to 5 pounds to your weight.
People with prediabetes or who have surgery on the stomach can develop reactive hypoglycemia, which means that the pancreas will inject too much insulin into the bloodstream after eating it. As a result, excess glucose is eliminated and the blood sugar level falls below normal levels. Even if your last meal is not new, hypoglycemia can make you hungry and you risk eating too much.
Weight Gained by Eating more Carbohydrates
The most noticeable way you can gain weight from carbohydrates is through unnecessary consumption. Excess calories from carbohydrates, proteins or fatty macronutrients add weight, but carbohydrates are a major cause because carbohydrates, sweets, and delicacies are so numerous.

For example, a 12-ounce jar of sweet cola contains 37 grams of sugar and 155 calories in total, of which 148 sugars have been added. They also have the potential for extra weight gain as blood glucose levels increase.
Weight gain from consuming more calories than your body burns for energy doesn’t happen overnight. As you eat too much regularly, you’ll gradually reach the point where you’ve consumed 3,500 calories more than you burned. At that point, you’ll gain 1 pound of weight. You may not notice it until, over time, it turns into 3 to 5 pounds or more.

If you regularly consume carbohydrates, the glycogen store is full and will be part of your total weight.
By choosing carbohydrates or complex starch you can avoid the fat accumulation effect of insulin. These carbohydrates take time to digest and are made from large sugar molecules that slowly enter the bloodstream. They also contain fibers that promote weight loss by preventing blood glucose peaks and making them completely feel. Complex carbohydrates like wheat, unpolished rice, beans, peas, potatoes, etc. have the advantage of providing vitamins, minerals, and antioxidants.
More importantly, make sure all the carbs you eat match your daily caloric goals. Institute of Medicine recommended 45 to 65% of your total calories should come from carbohydrates. When it comes to fiber, women need 25 grams a day, while men should receive 38 grams a day.

I guess natural ways to gain weight is great in the long term would prefer gaining weight naturally rather than relying on protein shakes and what not.
There are harmful effects of artificial weight gainers. Your body is not designed to take that concentrated nutrients. Weight gain has to be natural and slow process.

You have some great info here! I did an extremely low carb diet for about 5 months and lost about 70 pounds. Carbs can really pack on the pounds if youre not watching your calories. I have since started adding good carbs back into my diet along with some exercise to try and maintain my weight loss. I just love my fruits way too much to give them up for life!
Weight loss and fruits are part and parcel for each other. We are talking about weight gain here and that should be healthy not accumulating fats. Carbohydrates are the source to gain weight and not look obese.

Im a hardgainer (small guy who struggles to bulk up) and I need to eat alot of carbs. Problem I find is eating enough! Carbs make me feel full and I need t keep eating.
I go to the gym and my strength has been going up but im getting skinnier. Sigh
