How to prepare nettles risotto (Risotto all’ortica)

  You can use nettles to prepare a delicious risotto. Here in Italy is quite a popular receipt and they say it's very nutritive too.

Prepare vegetable stock

You can prepare some vegetable stock (this tasty water will later be used to cook the rice) with the vegetables you have. Today I found in my garden: leeks (green parts are great for the stock too), celery, carrots, rosemary, laurel. Don't forget salt and pepper.

 The five steps of preparing a vegetable stock are the following:

  •  Gather some vegetables and herbs 
  • Roughly chop all the vegetables 
  • Cover with water and simmer 
  • Cook for an hour or so
  • Strain   

Prepare risotto

I harvested some nettles. I used just the head of the plant, but you can use in general the leaves (just don't use the harder parts of the plant). Chop the nettles finely

Put few tablespoons of extra-virgin oil (or butter) in a pot with the leeks (or onion) you cut finely. 

Cook until the leeks become brown, then add a cup of rice. Half a glass of white wine adds a special flavour now.

Add the chopped nettles.

Now add 3 cup of vegetable stock and simmer for almost 15 minutes

Add butter and parmesan (or similar cheese)

Serve with some parmesan cheese on top.

This recipe (cup of rice, three of water) is for four persons.
