Sfouf the traditional Moroccan Ramadan sweet:

Hello my dearest of steemians!
Today am going to show you how to make a unique Moroccan sweet called Sellou or sfouf.
Sellou is made with browned flour, almonds, and sesame seeds, it is like an energy bar- in Morocco 🇲🇦, it is an essential dish during Ramadan where Muslims fast .
It’s also served to women after childbirth to give them more strength.
Every family in Morocco has their special way of making Sellou, some prefer it dry , others buttery, some fine and the others crunchy,
And they adjust the amounts of ingredients and spices to their taste.
So today I am going to show you how to make the traditional recipe.

INGREDIENTS:

  • 1,5 kg of flour
  • 1,5 kg of almonds
  • 1 kg of sesame seeds
  • 600 gms of honey
  • 675 gms of butter
  • 1/3 teaspoon of ground mastic gum
  • 3 tablespoon of anise powder
  • 1 tablespoon of cinnamon powder
  • pinch of salt

DIRECTION:

Preparing the flour

  • place the flour n baking pan and spread it evenly.
  • cook the flour in the oven for about 30 minutes.
  • stir the flour every 5 minutes for not burn.
  • you will notice that the color of the flour will start changing and the flour is done when it has a deep golden brown color.
  • let’s the flour cool down before using it.

preparing the others ingredients

  • while the flour is cooking you can actually start roasting the sesame seeds in skillet on medium low heat, and boil the almonds for 5 minutes to can take out their skin easily, then fry them until you get golden brown color.

  • mix the almonds + sesame seeds + anise seeds+mastic gum and put them in high blender to can get a powder.
    Personally I like to crush half ingredients, and I keep the others full ., to can get them crunchy sweet bar.
  • mix well with your hands the texture, add the melted butter and the honey , cinnamon, and salt , mix well and taste the texture if missing honey .
