Marshmallow Fondant

This recipe will make about 2 pounds of fondant

Ingredients

1 package 16 ounce mini marshmallows

2-5 tablespoons water

2 pounds sifted powdered sugar

1/2 cup shortening

Directions

Place marshmallows & 2 tablespoons water in microwave safe bowl. Microwave for 30 seconds. Stir until mixed well. Continue microwaving for 30 seconds until melted.

Place 3/4 of sugar on top of the melted marshmallow mixture. Fold into mixture. Add flavoring if needed.

Use shortening to grease hands and countering. Put mixture on counter. Start kneading like dough, add additional sugar and re-grease hands and counter so it doesn't stick.

If fondant is tearing easily its too dry, add water about 1/2 teaspoon at a time. Knead until fondant forms a firm smooth elastic ball that will stretch without tearing. If you have a stand mixer with a dough hook you can use that instead of kneading by hand.

Coat fondant with thin layer of shortening, wrap in plastic wrap then place in resealable bag or container and store in fridge.

When ready to use knead until smooth.
