Looks delicious, and I like the over-easy egg idea! At work's cafeteria I usually add dried cranberries, sunflower seeds, and sweet banana peppers. Time to branch out and try some new ingredients! Nice post @jaymorebeet!!!
Nothing like the over easy egg- it does double duty as an ingredient and a dressing. Try it- you'll love it!
