How to Make Kuah Pliek Ue: Tasteable and Nutritious

Introduction
All regions in Indonesia have a very distinctive food or cuisine. Similar to Aceh, it also has many unique foods or cuisines. One of Aceh's typical foods or typical dishes is Kuah pliek ue or Gulee pliek Ue. This typical Aceh food uses dozens of types of vegetables, ingredients and spices, there is also the main ingredient that must exist is "Pliek Ue". Pliek Ue / Patarana is a kind of waste residue in the manufacture of coconut oil by the process of decomposition and extortion of its oil content. The waste that has not contained the oil and then dried and then made the main ingredient making this Pliek Ue Gulee.

Materials
Ingredients needed in the manufacture of sauce pliek ue, there are materials that are mashed, chopped and some are cut only, namely:
a. Softened seasoning:

  • 7 cloves of red onion
  • 3 cloves of garlic
  • 7 pieces of red pepper
  • 20 pieces of cayenne pepper (according to taste, if like spicy add more)
  • 1 inch ginger
  • 1 1/2 teaspoon coriander
  • 1/4 teaspoon cumin
  • to taste pepper
  • to taste turmeric
  • 1 ons patarana / plik ue (according to taste)
  • 1 inch galangal

b. Casted materials:

  • 3 chopped lemon grass as smooth as possible
  • 6 orange leaves
  • 2 flowers kencong / bamboo shoots when chopped
  • curried leaves / oen teumurui finely chopped or given without chopping.

c. Vegetables:

  • 1/4 kg young jackfruit (cat's eye) cut into small pieces
  • 3 pieces of eggplant
  • 3 bunches of small chopped melinjo leaves
  • 1 ounce of young melinjo fruit
  • 1 ounce long bean cut into size 1/2 inch
  • 5 pieces of small pieces of green chili
  • 1/4 kg of small shrimp, clean
  • 2 pieces of coconut
  • Salt to taste
  • Enough water

How to make kuah pliek ue

  1. Jackfruit, melinjo fruit, fine spices, finely chopped ingredients, pliek ue, coconut milk, salt and add a little water, then boiled for the marinade to sink in.
  2. After the jackfruit, add liquid milk, stir until boiling. Then add eggplant, and green chili. Then add the coconut starch stirred constantly until boiling. After that add shrimp, leaves melinjo, and long beans that have been cut. Don't forget to stir.
  3. Allow cook until boiling. About half 30 - 45 minutes of fire After boiling. Then turn the fire off. Kuah pliek ue ready to serve.

Presentation
Kuah pliek ue better eaten when it is still hot or warm. Especially served with salted egg or salted fish. Extraordinary.
