Homemade Zucchini Bread
Hello steemits, have you ever had zucchini bread? Well, if you have not, you have to try it. It is so yummy.
Ingredients
- 2 eggs
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1 1/2 teaspoon of vanilla
- 1 1/4 cup of grated zucchini drained
- 1/2 cup of canola oil
- 1 1/2 cup of all purpose flour
- 1 1/2 teaspoon of cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 2/3 cup of walnuts
Directions
Preheat the oven to 350 degrees. Using a large mixing bowl , mix the 2 eggs, sugar, brown sugar, and vanilla.
Using a separate mixing bowl, mix the dry ingredients, flour, cinnamon, sea salt, baking powder, and baking soda.
Next, stir in the dry ingredients to the liquid ingredients for about 50 strokes, and after the two are combined add the zucchini to the ingredients with the walnuts.
Grease a loaf pan ( I use a 9x5 loaf pan), add the ingredients to the loaf pan and cook for about 50 minutes or until it is golden brown and tested with a fork to see if it is still doughy. Cool for about 10 minutes and it is ready to serve. This recipe makes 1 large loaf of zucchini bread.

This looks like a great recipe. We are only just coming into spring here but before we know it summer will have passed and we will have more zucchini than we know what to do with. The bread sounds delicious and the bonus is using up some zucchini.
