Paksiw na Pata Recipe
One of my favorite food, more than adobo is paksiw na pata. Pata is pork legs, while paksiw means to soak in vinegar and salt. However, this recipe doesn't only call for salt and vinegar, but with addition of soy sauce, garlic and brown sugar. What makes this dish my favorite is because the pork legs can become so soft, that the fat almost melts in your mouth. A similar Chinese dish is Pata Tim, less the spices. Without further adieu, here's how to cook this deliscious dish.
You will need:
Pork legs, sliced
Garlic, crushed
Onions, sliced
Whole or crushed peppers
Soy sauce
Vinegar
Brown sugar
Dried banana blossom
Marinate the pork legs in soy sauce, vinegar, garlic and brown sugar for 30 mins or overnight. Simmer the pork together with the marinate for 1 hour to 1 1/2 hours or until tender. Be sure to add water as the marinate evaporates overtime. Once the meat is already tender, saute garlic and onion and fry the pork legs for 5 minutes before transfering back to it's sauce. Put the dried banana blossoms and add some salt to taste.
I like my paksiw super sweet, and when I eat it with rice I dipped the meat to some salt, just a little to balance the taste. And one more thing, this is some food kids will surely love.
