Jalebi (An Indian sweet ) : Vegan

Jalebi is an authentic Indian sweet. There is no any English term for it but can be explained as "an Indian sweet made of a coil of batter fried and steeped in sugar syrup" It is made of refined flour, deep fried and soaked in sugar syrup so not so healthy but very delicious. Usually, animal fat like ghee or clarified butter is used to fry it but here on the eve of my daughter's birthday I made it vegan by replacing animal fat with groundnut oil and is also liked by non-vegans very much.

Ingredients

  • Refined wheat flour 1 cup
  • Turmeric powder 1/2 tsp
  • Vegetable oil for deep frying (I used groundnut oil)
  • Sugar 1.5 cup
  • Saffron threads 1/4 tsp
  • Water to make a batter(1 cup) and sugar syrup(1/2 cup).

Procedure

  • Preparation time to make this recipe is about 24 hours as it requires fermentation of batter. To make a batter add 1 cup water in 1 cup flour, 1/2 tsp of turmeric and make it uniform with the help of a blender.

Batter before fermentation

  • Cover with a cloth and keep the batter in the warm place or in direct sunlight to start a fermentation process. Depends on whether it could take about 24 hours to ferment properly.

Batter after fermentation

  • Mix well the fermented batter.
  • Make sugar syrup and add saffron threads in it.
  • Heat oil in a flat heavy bottom pan.
  • Make jalebis with the help of jalebi maker or any similar instrument as shown in the photo below.

  • Fry on medium heat till it becomes golden brown.

  • Soak in sugar syrup for few minutes and take out.

  • It tastes great when served hot but also very delicious if served later.

I have tasted it , it is very delitious ! May i ask if lemon juice neded to be added?

No need to add lemon juice as fermentation develops enough sourness in it.

Some Indian sweets are way to sweet for me to handle, but these are really good. Id like to try and make them one day, Ill use your recipe when I do! :)

I'm also vegan and love Indian sweets too. I have seen Jalebi but have not tried them yet - they usually look a bit too oily to my taste.
