दाल बाटी चूरमा (Daal Baati Choorma) or lentils and hard wheat rolls is an authentic Indian cuisine mostly popular in Indian state Rajasthan, MP, UP and Bihar. It is eaten with lots of animal fat(Ghee) but here I prepared its vegan version. Choorma is a dessert prepared with Bati, sugar, dry fruits and ghee but I replaced ghee with sesame oil. Here veganizing choorma is the most interesting part as there is a misconception that without animal fat Daal Bati Choorma has no taste, but Choorma was super delicious.
Chutney is an important ingredient to make daal delicious, I made Red chilli and Garlic chutney in Mortar and pestle
Ingredients for chutney-
- Red chilli whole soaked in hot water for 10 minutes 4 nos
- Garlic buds 10-15 nos
- Lemon 1
- Salt 1 tsp
All ingredients are mixed and crushed into a smooth paste.
Ingredients for Baati
- Whole wheat coarse flour 3 cups
- Baking powder 1 tsp
- Water to make the dough
The hard dough is made using the above ingredients kept aside for 15 minutes. Medium to big sized balls are made and baked in an oven at low flame.
Ingredients for choorma-
- Baati 3-4 nos
- Unrefined sugar (खांड) powder or jaggery powder 1/2 cup
- Dry fruits 1/4 cups
- Cardamom powder 1/2 tsp
- Sesame oil or virgin olive oil 1/4 cup
Baati is crushed into powder in a mixture grinder and other ingredients added. Make balls or can be served in powder form.
For Daal I used mixed lentils. Bengal gram daal, green gram daal, pink lentils, pigeon peas spilt and black gram. The recipe can be checked here
How to eat Daal Baati? It is really fun to eat daal baati as the fun of eating Daal Baati is not with a spoon. Traditionally Baati is crushed and mixed with Daal and Chutney and eaten with hand.
