incredible! I eat a similar dish when I visit my wife's family in Bangkok. We eat grilled pork neck with a fiery hot sauce of chilies, lime, cilantro and shallot. I have only eaten wild boar once when we hunted one in the States. The boar meat is very tasty.
Tasty and juicy especially if it fresh..
What kind of sauce you used for dipping?
For the wild boar we smoked the legs, made bacon from the belly and cut the loin into steaks and fried them and served the loin with mustard sauce. was a great meal.
