Crispy Gluten-Free Pan Fried Pork Chops

When you think of boneless pork chops that are lean, very often what comes to mind is bland and boring. A crunchy cornflake coating can be just the thing to give your lean boneless pork chops a lift. But remember not all brands of corn flakes are gluten free and not all brands are processed in a gluten-free facility.

  • Ingredients You'll Need:
  1. One-third cup of cornstarch
  2. 1 cup of buttermilk
  3. 1 tbsp of Dijon mustard
  4. Two teaspoons of sugar optional
  5. One garlic clove minced
  6. 3 and 1/3 cups of gluten-free corn flakes (I use the brand Arrowhead Mills, but any gluten-free corn flakes will work!)
  7. Salt and pepper to taste
  8. 8 3 oz boneless pork chop
  9. 2/3 cup of vegetable oil
  10. Lemon wedges
  • Cooking Instructions:

In a shallow mixing bowl combine buttermilk, mustard, sugar, and, garlic until mixed thoroughly and set aside.

Put corn flakes and a quarter teaspoon of salt and a quarter teaspoon of pepper into a food processor and process until finely ground about 10 seconds. Using a really sharp knife, cut one-sixteenth of an inch deep slits on each side of the pork chops, spaced a half an inch apart.

Season chops with salt and pepper. Working with half of the chops at a time, place pork chops in a bag of the corn starch mixture and seal bag, and shake the bag to coat the chops. Using tongs, remove chops from bag, shaking off excess cornstarch. Coat in buttermilk mixture, then coat with cornflake mixture pressing gently to adhere breading. Place ready pork chops on prepared wire rack. Let the coated chops rest for 10 minutes.

Heat 1/2 cup of canola oil in a 12-inch nonstick skillet over a medium-high flame until simmering.

Please for chops in the skillet and cook each until golden brown on both sides. Once the center of each chop registers at 145 degrees which should take 2 to 5 minutes longer transfer the pork chops to a paper towel-lined plate and let drain for 30 seconds on each side transfer to clean wire rack. Serve with lemon wedges!
