Hey, love to see some recipes from this side of the world.

Just a heads up, when you say

3.Now treat the salmon to tartar and season with salt, pepper cayenne, cream fraiche, nutmegg and lemon juice. Add the dill and the chives also chopped.

I think you mean "mince the salmon to tartar..."
