Onion and Cheese Omelette
Hi all. I hope you are well. This morning I made a onion and cheese omelette
🔶1 tsp extra virgin olive oil
🔶1/4 red onion, sliced
🔶2 free-range eggs, whisked
🔶1/4 cup reduced-fat cheddar cheese, grated
🔶1 tbsp fresh chives, chopped
🔶1 tsp butter
Heat oil in a frying pan over medium-high heat, add onion, reduce heat to medium, and cook until soft and golden.
Remove onions from pan, add butter.
When melted, add eggs.
Swirl to cover pan.
Sprinkle onion, cheese and chives on top of eggs.
Cover the pan with a lid and cook for 5-7 minutes or until eggs are cooked through.
When cooked, fold omelette in half and serve.
