Few days ago I uploaded a photo of the nettle pie I made this autumn. I applied to @juliank's photo contest for food photography... Later on @freegardens proposed to write a recipe for the pie, so I decided to do it cause I consider it useful & valuable for the Steemit community, but also to the wider groups of people...

Anyway, this autumn I went to the forest to pick mushrooms but the mushroom season was already coming to an end so I didn't want to loose much time in the forest when there's almost no mushrooms. In those moments I remembered the place next to the creek where the nettle grows. I knew that I should be picking only the young leaves & that probably the nettle season was also finished but I gave it a try...

Surprisingly, I found plenty of young leaves & I started to pick them with my bare hands. It burned a lot but it is said to be healthy too. So I continued to pick it until the moment when I couldn't bear it anymore. Then I took a T-shirt & rapped it around my left hand & in the right I was holding a knife to cut the leaves to make the picking easier.

I think I picked more than 1 kg, maybe even 2 kg, I don't remember anymore. I just remember I had 2-3 full canvas bags. NEVER USE PLASTIC BAGS (ESPECIALLY WHEN PICKING MUSHROOMS)!

Maybe the day before I bought some fresh young onion & emery (onion specie). I just adore emery! I also had dry tomatoes which I was cutting & drying on the Sun by myself too (LET ME KNOW IF YOU WANT A RECIPE!). I cut them all, the onion, emery & the dry tomatoes into small pieces.

My granny & many other women say that firstly you need to boil the water & drop the nettle leaves in the boiling water for less than a minute. Usually I listen to my granny's advice but this time I was thinking about it & considered it wrong cause the nettle will boil anyway inside the pie paste! So, YOU DON'T NEED TO BOIL NETTLE SEPARATELY!

The paste I made of 2-3 different flours (integral wheat, wheat & maybe even a bit of corn or spelt flour), Himalayan salt, olive oil & water. I think I didn't ad any baking soda or yeast but I also think that you wouldn't make a mistake if adding some.

I make bread in a very similar way like I made the pie paste.

Then I stretched the paste in the black metal casserole & on the paste I threw 2-3 handful of nettle, then I added pieces of onion, emery & dry tomatoes, salt, chili & pepper. I repeated the same action 3-4 times until it became a thick, green layer. While I was rolling the paste I applied the pressure so that the layer became thinner. (You can also add some dry mushrooms like boletus (porcini), if you like.)

While I was doing all these preparations I turned on the oven to 150 °C  to warm it up but when I put the casserole with the pie inside, I boosted the oven to 200 °C. I baked the pie around maybe half an hour & was checking it often cause I was not sure how long do I need to bake it & I didn't want it to burn. When it was baked, I pulled it out & covered it with a "kitchen cloth" for 10 min & then it was ready to be eaten. I served it with extra vergine olive oil. It was delicious!
