Gorgeous Produce AND A Yummy Recipe...
One of the wonderful things about living in the "Breadbasket" of Panama is the abundance of fresh produce available here locally! It is literally grown the the sides of mountains and the fields worked by hand. The amount of produce coming down the mountain tied up in wooden crates in the backs of pickups ... well, it's remarkable. My husband decided he wanted to do some juice fasting so we headed off to our local fruit and veg stand to see what we could find today! I bought all these veggies for $8! It's CRAZY!! 8 BUCKS! The cucumbers are huge, the carrots are fat, and the beets are bigger than fists.. much bigger, in fact!! Can't wait to get to juicing with him over the next few days!
I also bought some broccoli to make us some of our favorite broccoli salad to go with grilled chicken for dinner! Thought I'd share my recipe for there here. It's sooooo delicious and super easy to make. I kept my pics simple because it's kind of a no-brainer to make. Directions are as follows.
To a large bowl add:
6-8 pieces of cooked and crumbled bacon
2-3 heads chopped up broccoli
1/8 cup chopped red or white onion. (If you like more, add it!)
2/3 cup rough chopped cheddar cheese
1/2 Craisins (dried cranberries.. dried cherries are even better!)
Ok back to the recipe!
In a smaller bowl add:
Equal ratios Vinegar(white or apple cider works best) and Mayonnaise (I love using Miracle Whip.. love it, hate it.. whatever! I used about 1/2 cup of each)
1/2 tsp-ish of salt
1/3 cup of sugar
black pepper to taste
Mix all this up with a whisk till smooth and the pour over your broccoli yummies and mix thoroughly! At this point, you are ready to eat it... though it's ok to let it sit in the refrigerator for a few hours till dinner is ready! It's so good. I'm eating some right now actually. Feel free to add some toasted almonds on top right before you eat it (otherwise they get soggy). You can adjust any of these ingredients more or less to your liking too! It's so versatile and even more tasty!

Sounds great, but is there an alternative for the onions, like celery? Thanks for the recipe.
But wait, don't you LOVE onions???! Hehehe... no, just leave them out! You could totally add celery too if you'd like! I bet that would be tasty!
But you also dislike mayo. Maybe ranch dressing? We might have to make a few adjustments. ;) So will you be eating or juicing only? Like...Friday night?

Then you go back to the US and have a heart attack at the supermarket. Everything costs way more and doesn't taste as good. We are lucky to be here! I've got to try that salad, looks great.
Yup, been there. Except when I go, I marvel at all the VARIETY they have of just about everything. But you are right on about the produce... it's just not the same! Make the salad. You'll love it!
